About Our Oysters:
Our oysters are fresh and delicious! They are a perfect balance of briny and sweet. According to Downeast magazine, Green Boat Oysters are “ unadorned, pure and briny, like a shot of cold sea liquor.”
We buy our seed oysters from a company that selectively breeds disease free and beautifully shaped oysters. You can buy them as Petites or Selects (traditional size).
Because we run our upwellers with solar panels and run only a small hand crafted boat with a small engine, our oysters grow in clean Maine waters.
Our favorite ways to serve Green Boat Oysters:
-On the ½ shell (Raw):
Here is some serving advice from Tim’s wife, Abigail “After shucking the oyster, pour out all the extra brine. Then add a generous squeeze of fresh lemon juice. I don’t like to swallow the oyster whole like some people suggest. I like to bite into the oyster and taste the sweetness, while also enjoying the texture. People are afraid that the texture will be slimy or mushy like a clam, but to me, the texture of the oyster is my favorite part. It is smooth and delicate.”
-Lightly grilled oysters with thyme, lemon and butter sauce from our friend’s Rob and Reba:
Slowly cook oysters on the grill over a very low flame. When shells just pop open enough to get a knife through, remove from the grill. Remove the curved part of the shell and leave the light cooked oyster on the flat part of the shell. Dip or generously douce with butter sauce (½ butter, ½ lemon, pinch of thyme)
